Eligio Escobedo is a restaurateur and chef with more than 30 years of experience specializing in Mexican and Cuban cuisine. He was born in Mexico and came from a restaurateur family that owns 3 restaurants in Mexico. His style of cooking is using different herbs and condiments to bring out the true flavor of the freshest ingredients. He insists every dish in his kitchen must be made from scratch to ensure the highest quality.
Eligio graduated from Universidad Iberoamericana with a degree of Gastronomy. Upon graduation, he has been working in different restaurants and hotels in Mexico & United States. For a long period of time, he was the catering chef for the Hollywood studio in Los Angles. In the past 15 years, he has moved to Asia with experience from Beijing, Bangkok and now in Hong Kong, to continue his mission of spreading his love of Mexican cuisine to this side of the globe.
Vivian Wong founded Mr. Taco Truck in 2010, which was listed as the Best Mexican Restaurant in Hong Kong by CNN and endorsed by Mexican Consulate for its authenticity shortly after it was established. She and Eligio co-founded Verde MAR in 2015 which committed to offer a healthy and authentic Mexican dining experience to the people in Hong Kong. Her reason to found Verde MAR is simple – to share her passion in healthy Mexican cooking to people who enjoy good food.
Vivian studied Finance in the Chinese University of Hong Kong and later in UC Berkeley where her love of Mexican food sparked off. She is fluent in English, Cantonese, Mandarin, and Spanish. She is a yoga practitioner and her loves of healthy eating and green living is translated to both the menu and the operation of the restaurant. Vivian is the mind of the operation and overall strategic development of Verde Mar.
