TGIF! Thanks Chef Eligio prepared us a full Mexican Breakfast today to start off our Friday!
Mexican breakfast, translates as “el desayuno” in Spanish, is the most important meal of the day for Mexicans. Mexicans have a strong love in Eggs, Tortillas and Beans! Therefore, most of the breakfast dishes come with these three and it certainly gives you a balanced nutrients and vitamins to start off your day.
(However, being a native Chinese, even though after 8 years of opening an authentic Mexican restaurant, Beans is still not my cup of tea… so at Verde MAR, you get to choose!!! Beans can change to salad, tortilla or rice etc. and today I just took out the Beans completely and serve only 1 egg to control my calories XD)
So what Chef prepared today was Chilaquiles (Chi-la-key-lys). As you can read from the name “Chilxxx” which comes from the word “Chile” (chili in English), the dish is usually prepared little spicy. Typically, corn tortillas are cut in quarters, then lightly baked and topped with a Tomato-Mint sauce. Some version also add sour cream and ranchero cheese. Serve with 1-2 eggs and refried beans. Although you can take the spiciness completely away, I would say it is not the same without the little spicy kick.

Next time I will talk about other dishes if Chef has the mood to cook for us again hahaha
Lucky us whom work in the restaurant, get to start our day little later, enjoying our breakfast at 10am while most people are already working hard in the office! But now it’s almost noon and we gotta prepare for a busy lunch work! Have a good weekend everyone!
