During the cold winter months in Hong Kong, hot pot is a local favorite and must have. To celebrate this regional love affair, the authentic Mexican restaurant Verde MAR, from 30th December, is proud to introduce the Caldo culture of Mexico to Hong Kong with three unique soup to choose from: Mexican Chicken Soup (Caldo de Pollo), Mexican Fish Soup (Caldo de Pescado) and Mexican Vegetable Soup with Cactus (Caldo de Verduras con Nopales) especially for vegetarians.
Caldo, which means Soup in Spanish, is a traditional soup in Mexico that uses vegetables as the main soup base. Chef Eligio Escobedo has continued the authentic homemade recipe and incorporated fresh seasonal vegetables such as chayote, avocado, cabbage, carrots, potato, corn and Latin American pumpkins to create the rich soup base. Unlike some local hotpot soup base that is full of spices and “heat”, Mexican caldo’s healthy vegetarian base is all natural full of nutrition and perfect for the winter. Accompanied with fresh lime, cilantro, onions and chili – individual soups can be customized to your personal taste.
Aside from the hearty soup base, one must try unique ingredient is Cactus, Chef Eligio boiled entire Cactus leaf to ensure the perfect crunchy texture on the outside and soft within like Aloe Vera, which is full of smoothing nutritious jelly and anti-oxidants, making it one of the healthiest hotpot ingredients!
Mexican Vegetable Soup with Cactus
Mexican cuisine has always included a strong focus on healthy vegetarian ingredients, which needless to say is exemplified in the Caldo de Verdura: Apart from super-food Cactus, you can also find Mexican chayotes with its nutritious content; Avocado with its ability to lower cholesterol; pumpkins with its rich fibers and sweet flavors – All combined to create a refreshing vegetable broth.

A vegetable and tomato based fish soup mixed with a variety of fresh seafood for rich extra flavors. A true seafood extravaganza whole fresh red snapper, baby octopus, cuttlefish, mussels, oysters, all combined to create this favorite traditional seafood soup along the coast of Mexico.

Caldo de Pollo is one of the oldest Mexican homemade recipe. The soup is fresh prepared using several chickens to ensure the broth is rich and tasty and simmered with fresh vegetable to create a heart warming Chicken soup rich in flavors and light in oil due to the rich vegetarian ingredients.
