“Tostada” is Spanish for “toasted”. It is the name of a classic Mexican snack that is served on a toasted corn tortilla. Its crunchy texture combining with the wonderful flavours of the fillings make it so irresistible. This is the first time Foodie Owen eating a tostada and it has already become his favorite!

Ingredients:
Shredded chicken 150g
Boneless Pork feet 350g
Lettuce 300g T
ostadas 6pcs
Chicken soup 200ml
Refried beans 50g
Lime 2pcs
White onion 30g
Tomato 250g
Feta or Ranchero cheese 20g
Sour Cream 3 tsp
To taste:
Carrot, Cucumber, Red onion, Pepper, Oregano, Jalapeño
Recipe:
1) Boil the chicken with water till soft and slightly season with salt. Shredded the chicken with two forks or hands. Use the water as chicken Soup
2) Boil 800g pork feet till soft with water and salt. Take out the bone and cut into small pieces
3) Boil the chicken soup with tomato and onion till soft
4) Slice the red onion and put it in a bowl. Cut 1/4 lime and squeeze the juice over the sliced red onion
5) Season the red onion with a small pinch of salt
6) Slice the cucumber, carrot, lettuce and the remaining lime
7) Blend the tomato and onion until smooth. Add little chicken soup to the mixture to get the right salsa texture
8) Season the salsa with a pinch of salt, pepper and oregano
9) Put some sour cream on 2 tostadas, some refried beans on 2 tostadas and some salsa on the last 2 tostadas
10) Add the shredded chicken on 3 tostadas and the other 3 with the pork feet
11) Top the tostadas with lettuce, red onion, carrot, cucumber, sour cream and cheese
12) Serve the tomato salsa and jalapeño into small containers to eat with the tostadas
材料:
雞絲 150克
去骨豬蹄 350克
生菜 300克
炸粟米脆餅 6片
雞湯 200ml
斑豆蓉 50克
青檸 2個
白洋蔥 30克
番茄 250克
菲達或牧場芝士 20克
酸忌廉 3茶匙
隨意: 紅蘿蔔、青瓜、紫洋蔥、胡椒、阿里根奴、墨西哥辣椒
食譜:
1) 將雞肉加水煮至軟鸒,加鹽稍微調味。用兩把叉子或手把雞肉撕開。用剩下的水做雞湯
2) 將800克豬蹄加入水和鹽煮至軟身。取出骨頭,切成小塊
3) 將雞湯與番茄和洋蔥一起煮至軟身
4) 將紫洋蔥切絲,放入碗中。切 1/4青檸,把汁擠在切好的紫洋蔥上
5)用少許鹽將紫洋蔥調味
6) 將青瓜、紅蘿蔔、生菜和剩下的青檸切片
7) 將番茄和洋蔥攪拌成茸,加入少量雞湯
8) 用少許鹽、胡椒粉和牛至調味莎莎醬
9) 在 2 個 tostadas 上放一些酸忌廉,另外2 個 tostadas 上放一些斑豆蓉,在最後 2 個 tostadas 上放一些莎莎醬
10) 將雞絲加上3 個tostadas,另外 3 個加入豬蹄
11) 在tostadas上放上生菜、紫洋蔥、紅蘿蔔、青瓜、酸忌廉和芝士
12) 將莎莎醬和墨西哥辣椒放入小容器中,與tostadas一起食用
