Today Eli is teaching me how to make the BEST Pan de Muerto! Our recipe will get you a soft and delicious Pan de Muerto that has a rich and fresh orange flavour. It’s also very healthy coz we have reduced the sugar and butter but is equally delicious! Pan de Muerto is a type of sweet bread traditionally baked in Mexico during the week of Día de los Muertos, which is celebrated from Nov 1 and 2. Let’s make it now to celebrate this wonderful festival!
今天 Eli 教我如何做最好的墨西哥香橙包!Eli 的低糖低油食譜不但健康,而且柔軟可口、有濃郁及新鮮的橙味。Pan de Muerto 是墨西哥於 11 月 1 日至 2 日慶祝的 Día de los Muertos 必吃的食物。 Día de los Muertos是一個紀念先人的傳統及重要節日。
Ingredients (servings: 8 x 5.5 inches Pan de Muerto):
Flour 1200g
Butter 220g
Sugar 300g
Milk 500ml
2 orange zest
Dried yeast 33g
Vanilla oil 1.5 tsp
5 eggs
Recipe:
1) Add warm milk (about 30C), dried yeast, 100g sugar and 3 tbsps of flour to a mixing bowl. Mix well. Cover with plastic wrap and let the yeast activate
2) Add flour, melted butter, milk, sugar, vanilla oil, eggs and orange zest to a big mixing bowl. Stir well
3) Add the yeast mixture to the big mixing bowl and mix together until it forms a dough
4) Brush some oil in a bowl thoroughly, Put the dough in. Cover with plastic wrap and let it rise double
5) Knead the dough a little bit and separate into 300g small balls
6) Knead the small balls into Pan de Muerto
7) Brush some egg wash on the Pan de Muerto
8) Preheat the oven at 100C for 15 minutes. Bake the bread for 10 minutes or until it turns golden brown
9) Brush some butter and sprinkle little sugar on top of the Pan de Muerto
材料(份量:8 個 5.5 寸的墨西哥香橙包):
麵粉 1200克
牛油 220克
糖 300克
牛奶 500毫升
鮮橙皮(兩隻橙)
乾酵母 33克
雲呢拿油 1.5 茶匙
5隻雞蛋
食譜:
1) 將溫牛奶(約攝氏30度)、乾酵母、100克糖和3湯匙麵粉加入攪拌碗中,攪拌均勻。蓋上保鮮紙讓酵母脹大
2) 將麵粉、已融化的牛油、牛奶、糖、雲呢拿油、雞蛋和鮮橙皮放入一個大攪拌碗中,攪拌均勻
3) 將酵母混合物加入大攪拌碗中,攪拌至形成麵團
4) 盤子裡塗一層食油,把麵團放進去,蓋上保鮮紙,讓它脹大一倍
5) 將麵團揉搓,分成300g的小球
6) 將小球揉成墨西哥香橙包
7) 在墨西哥香橙包上塗上蛋液
8) 焗爐攝氏100度預熱15分鐘,放入麵包烤10分鐘或直到它變成金黃色
9) 於香橙包上塗一些牛油及灑少許糖
