    EXECUTIVE CHEF

    Eligio Escobedo is a restaurateur and chef with more than 25 years of experience specializing in Mexican and Cuban cuisine. He was born in Mexico and came from a restaurateur family that owns 3 restaurants in Mexico. Eligio graduated from Universidad Iberoamericana with a degree of Gastronomy. Upon graduation, he has been working in different restaurants and hotels in Mexico & United States. For a long period of time, he was the catering chef for the Hollywood studio in Los Angles. In the past 10 years, he has moved to Asia with experience from Beijing, Bangkok and now in Hong Kong, to continue his mission of spreading his love of Mexican cuisine to this side of the globe.


    Vivian Wong

    RESTAURATEUR

    Vivian Wong is a restaurateur who co-owns Mr. Taco Truck, which was listed as the Best Mexican Restaurant in Hong Kong by CNN and endorsed by Mexican Consulate for its authenticity shortly after it was established. Vivian studied Finance in the Chinese University of Hong Kong and later in UC Berkeley where her love of Mexican food sparked off. Vivian is a former Equity Research Analyst at an Investment Bank and has extensive experience in Business & Strategy Planning and Financial Analysis. She is fluent in English, Cantonese, Mandarin, and Spanish and is now studying Japanese. Vivian will be the mind of the operation and overall strategic development of Verde Mar.


    Ricky Ho

    DESIGN MANAGER

    Born in Hong Kong and raised in San Francisco Bay Area, Ricky practice architecture and used to hate Mexican food but is won over when his Mexican contractor show him REAL Mexican food from the Hispanic neighbourhoods. Full of heart, history and passion, he is no longer satisfy with fast food makeovers and Americanize monstrosity. Ricky's life has changed forever and he vows to bring the flavors and spirit of true authentic Mexican food everywhere he went. Partnered with Vivian & Eligio, Ricky strive to create a venue that reminisce a relaxing courtyard in Old Mexico, full of color and artworks and filled with Mexican folk tunes.
